2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons minced garlic
6 cups low-sodium chicken or vegetable broth
One 14.5-ounce can of diced tomatoes
One 14.5-ounce can black beans, rinsed and drained
One can of corn, rinsed and drained
2 cups your choice of cooked shredded chicken, ground beef, shredded pork or sauteed mushrooms for meat substitute.
2 limes, juiced, plus wedges for garnish
Mo' Cajun Spice Country Bean seasoning(Season to taste)
1 cup roughly chopped fresh cilantro leaves
1 avocado, pitted, sliced
1 cup shredded Monterrey cheese
1 tsp Sour Cream
In a large saucepan heat the vegetable oil. Add the onions and cook for 2 minutes. Once the onions have softened add the garlic and cook for another minute. Pour the chicken or vegetable broth, tomatoes, corn, and beans into the pot and bring to a boil. Once at a boil lower heat to simmer and add your choice of cooked meat and Mo' Cajun Spice Country Bean Seasoning(Season to Taste). Cook for 20 to 25 minutes. Add lime juice and fresh cilantro to the pot. Ladle soup into a serving bowl and top with a lime wedge, tortilla chips, avocado slices, sour cream and cheese.
